Dr. Cheryl Mitchell is recognized as a world authority on sweeteners, rice processing, and the extraction and metabolism of inulin. She has spent the last 30 years working in the food industry creating wholesome ingredients through unique food processing methods that maintain or maximize the natural goodness of foods. Her expertise in carbohydrates, metabolic functionality of sweeteners and complex carbohydrates is well recognized in the food industry. Additionally, it is her expertise in aseptic processing of natural foods that facilitated the growth of her former company, California Natural Products (CNP) which she co-founded and co-owned, into one of the largest low-acid aseptic packaging companies on the West Coast. Dr. Mitchell has particular expertise in the area of creating novel ingredients and processes as a method of solving product development problems. She has significant experience with food machinery and process engineering, particularly in moving research products from bench-top through pilot-plant development. Rice, pectin, and inulin ingredients which were developed under the guidance of Dr. Mitchell are utilized in over 300 products currently being marketed throughout the United States, Canada, and Europe. The rice beverage product co-developed by Dr. Cheryl Mitchell and currently marketed by Hain-Celestial, is the number one selling rice beverage in the United States. It is Dr. Mitchell's goal to develop practical and unique natural food ingredients and products using cutting-edge research and process equipment. Dr. Mitchell holds a Ph.D. in Chemistry from Texas A & M University and is a professional member of the Institute of Food Technologists and the American Association of Cereal Chemists.
